Cheltenham food fans – in fact, anyone from anywhere who appreciates a fine noodle – will soon have their fill of ramen as Phat Boi sets up shop at Dunkertons Cider later this month.
The dim sum and noodle specialist is determined to bring an authentic taste of China to Gloucestershire with its signature range of ramen noodles and dim sum dishes.
Lots of choice for Cheltenham
As soon as it hits the ground, Phat Boi will be serving shao mai – an open dumpling filled with pork, shrimp, spices and water chestnuts and you can have your dumplings either steamed or fried.
Then there’s xiaolongbao, which is a soup dumpling filled with tender pork and a tasty broth which will have you wanting more.
Most of us are already familiar with wontons – little dough parcels bursting with spicy shrimp and prawns, all boiled and served with lashings of Phat Boi’s very own homemade chili oil sauce.
Handmade and local
All of Phat Boi’s dim sum and noodles will be made in house, entirely from scratch, with locally-sourced ingredients – except for the all-important ingredients shipped in from Shanghai. This combination means that diners get as authentic an experience as possible when they come to Phat Boi.
All about those noodles
When it comes to the ramen, the treats don’t stop either. There’s the three-mushroom-and-truffle ramen, with shitake, oyster and enoki mushrooms, combined with truffle oil and served with udon (thick wheat) noodles or soba (thin buckwheat) noodles. For a meatier feast, there’s Taiwanese beef ramen with pulled brisket beef, ginger, pak choi and either egg or udon noodles.

There’s no official opening date just yet, but Phat Boi will be with us by the end of July, so get to work on your chopstick skills.
